Whole-muscle seafood, made from plants. Our plant-based salmon looks, cooks, tastes and flakes - just like fish.

Improve formulation based on commercial feedback & regulatory requirements$248Kvalue2023start2023end

New School Foods has created it’s first product - a plant-based fillet of salmon that looks, cooks, tastes and flakes like fish. The firm is ready to start external taste tests with professional chefs. The feedback from those chefs will help us improve our product as we prepare for our initial launch. We have also identified some regulatory restrictions on our ingredients that must be slightly modified in order to proceed with our commercial launch in the US. This project will help us reach our commercialization targets in 2024.

Optimizing Lab Formulation for Commercial Release$98.5Kvalue2022start2023end

Our team has produced a compelling prototype, photographs, and the product has good texture (empirically proven through TPA & rheology) as well as features that validate the key benefits of our production technology. However, additional R&D is required to make the product market-ready for customers. Significant amount of effort is required to fine-tune the product's organoleptic properties, measured both empirically and through our human taste test trials, identifying and addressing shortcomings related to taste and texture.
